Fruits & Nuts - Apples, Pears, Medlers, Chestnuts (roasting over an open fire), Hazelnuts, Walnuts

Meat - Beef, Duck, Grouse, Goose, Rabbit, Venison, Mallard, Pheasant, Guinea-Fowl

Sea - Clams, Cod, Crab, Haddock, Brixham sole, Monkfish, Mussels Oysters, Pollock, Prawns, Scallops, Brill, Turbot


 

Suppliers

Knowing where our food comes from is important. Knowing how it got to us and the welfare and growing standards are even more important. Provenance is key.

Butcher. Our meat is supplied by Christopher McCabe Butchers. All the meat we buy from them is farmed in the South Hams. They can tell us the farm and the farmer and even the fields the produce came from. He’s also handy with a black pudding.

Fish. Fish is supplied by Andy Daer a fish merchant for Ian Perkes of Brixham. Where possible Andy gets us the finest catch from the Day Boats - local, sustainable species caught in small quantities. His passion and knowledge is infectious.

Vegetables. We are supplied with seasonal, organic vegetables from a small holding outside of Staverton. This is seasonal produce like you’ve never seen before. The quality is beyond compare. We also use the great local merchants, Challices. Most of their supply farms are within 20 miles of Totnes.

Forage. We forage! We love to forage! It clears the mind, connects us to the land and the seasons and it’s where we plan and talk and the creative process begins. Our foraging mentor, David Beazley, helps with the foraging as it’s hard to get out everyday. His foraging knowledge is second to none as proved in his writings and talks on the art and skill of foraging.

Beverages. Wine comes from the brilliant people at Christopher Piper Wines in Ottery St Mary. Cider and soft drinks from the ancient orchards of Ashridge Cider. We have vegan beers and the utterly gorgeous tomato beer from Barnaby’s Brewhouse. Many Hands Brewery at Dunkeswell supply us with a stunning Milk Stout amongst others. 10% of their profits go to charity. New Lion Brewery in Totnes make some of the most exciting beers we’ve tried in years, we love them!
